Sloppy Joes Zydeco Style

“This pasta recipe is easy and delicious and allows flexibility on the part of the cook to substitute broth for the heavy cream, and arugula for the spinach.”
Ingredients:
5 cloves of garlic chopped
½ cup of olive oil
8 oz. package of fresh white or brown mushrooms sliced
5 oz. fresh spinach leaves
3 TBS heavy cream
2 TBS parmesan cheese grated
¾ lb corkscrew pasta (Cavatappi)
Salt to taste
2 TBS Zydeco Creole Trinity Salsa
3 TBS Zydeco Sweet Potato Salsa
Ground white pepper to taste
Method:
Heat olive oil in a large skillet on low. Sauté the garlic until lightly golden brown. Stir in sliced mushrooms, Zydeco Sweet Potato and Trinity Salsas, salt, pepper and cover, continuing to cook on medium heat. In a separate pot, bring 3 cups of cold water to boil adding salt to taste. Add pasta to boiling water stirring occasionally. Pasta should cook in about 6-8 minutes. Meanwhile, continue cooking mushrooms until soft reducing the liquid. When mushrooms are cooked, stir in heavy cream and fresh spinach and continue to simmer. Just prior to draining cooked pasta, add some of the pasta water to mushrooms to bring consistency of sauce to a rich creamy texture. Drain pasta and slowly add pasta to mushroom sauce mixing well for ultimate creamy consistency. Serve immediately and sprinkle with grated Parmesan cheese!

“This simple & delicious Stir Fry can be made in 20 minutes and allows complete flexibility on the part of the chef so that you can add any ingredients you like!”
Ingredients:
1 lb. pork, beef or turkey sausage with casing removed
4 TBS oil (your choice)
½ onion sliced in strips
5-6 cloves of garlic chopped
4-5 Mini Sweet Peppers chopped
2 cups fresh or frozen cauliflower & broccoli florets & baby carrots
½ jar Zydeco Sweet Potato Salsa
¾ cup of water or broth
Salt and or your favorite spices to taste
Process:
In a large skillet or wok, pour in oil. Sauté chopped onion on medium heat and when just transparent, add garlic and sausage and continue to brown meat on medium heat until consistency of meat is dryer and crumbles. Add sweet peppers, cauliflower, broccoli and carrots and continue to sauté to desired firmness. Add ½ jar of Zydeco Sweet Potato Salsa mixed with water or broth and your favorite seasoning & herbs to taste. Cook for about 10 more minutes or just until some of the liquid dissipates. Option: Serve over rice.

Zydeco shrimp pasta INGREDIENTS:
DIRECTIONS: In a large pot of boiling salted water, cook pasta according to package instructions; drain well. Season shrimp with salt, pepper, and lemon zest to taste; set aside. Melt 2 tablespoons butter in a large skillet over medium high heat. Add garlic and red pepper flakes and cook stirring frequently until fragrant, about 1-2 minutes. Add shrimp and cook, stirring occasionally, until pink, about 2-3 minutes; set aside. Melt remaining 6 tablespoons of butter in the skillet, sauté mushrooms. Stir in pasta and Zydeco Creole Trinity Salsa. Stir in shrimp. Serve immediately, garnished with Parmesan and parsley. Serve and enjoy.
